Sugar Cookie Bars

Do you love Sugar Cookies but hate the work of mixing the dough, letting it chill, rolling it out, cutting it out, rolling it out, cutting it out, repeat? And then after all that, you have to frost them? I love a good sugar cookie but they are so time consuming! You have to have a whole day dedicated to making a batch.

I came across this recipe on Pinterest and all my hours spent on that website have finally been worth it. These are wonderful, easy, and everyone loves them!! I made them for work and they were gone in seconds. Here is the easy recipe:

Sugar Cookies:

1 C. Butter, Softened
2 C. Sugar
4 Eggs
2 t. Vanilla or Almond Extract (I used Almond)
5 C. Flour
1 t. Salt
1/2 t. Baking Soda

Preheat oven to 375 degrees. In a large bowl, cream butter and sugar together with an electric mixer or kitchen aid until fluffy. Add eggs one at a time, mixing well after each addition. Blend in vanilla or almond extract. In a separate bowl, combine flour, salt, and baking soda. Add to butter/sugar mixture and stir until combined. Spread dough onto a greased 13x18 baking sheet. Bake for 10-12 minutes, until light golden brown or until a toothpick inserted in the center comes out clean. For soft cookies, do not overbake. Cool completely before frosting.

Frosting:

1/2 C. Butter, Room Temperature
4 oz. Cream Cheese, Softened
1 t. Vanilla or Almond Extract (I Used Almond)
4 C. Powdered Sugar
5 T. Milk
1/4 t. Salt

To make frosting, combine the butter and cream cheese until smooth. Stir in vanilla or almond extract and salt. Add powdered sugar in a 1-2 cup increments, until combined, then add milk on Tablespoon at a time until frosting is desired spreading consistency. You may not use all the milk. Spread frosting over the cooled cookie bars and cut into squares.

Pumpkin Cupcakes with Salted Caramel Buttercream

Are you all tired of me posting new recipes yet? Well I have like 3 others I still want to post, two of which are pumpkin recipes from last year that I never posted! Haha! Sorry, just sharing the love of food!


I pinned this recipe on Pinterest and have been dying to try them. I finally had the chance to make them today for a game night with friends. 'Tis the season for pumpkin right! I thought these were really good. The cupcake part was so good, in fact, I thought they seemed a little bit more like a muffin. They are really good without frosting. The frosting was delicious too. I added about a cup more of powdered sugar to the frosting though, because it was just too soft. I liked the flavor better without the extra powdered sugar, so maybe next time I would see if chilling it for 1/2 hr or so would make it good to frost with. (I think next time I'd like to try this recipe too.) This isn't the greatest pic, as I didn't take it until we were at the game night and only 4 cupcakes remained, so I just snapped it really quick. If you go to the other girls blog, her picture makes them look so much more delicious. 

Pumpkin Cupcakes

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon coarse salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground allspice
1 cup packed light-brown sugar
1 cup granulated sugar
1 cup (2 sticks) unsalted butter, melted and cooled
4 large eggs, lightly beaten
1 can (15 ounces) pumpkin puree

Preheat oven to 350 degrees. Line cupcake pans with paper liners; set aside.  In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice; set aside.

In the bowl of a stand mixer, fitted with the paddle attachment, combine the  brown sugar, granulated sugar, butter, and eggs. Beat on medium speed until well combined.  Add dry ingredients, and mix on low until smooth. Fold in pumpkin puree.

Divide batter evenly among liners, filling each about halfway. Bake until tops spring back when touched, and a cake tester inserted in the center comes out clean, 20 to 25 minutes, rotating pans once if needed. Transfer to a wire rack; let cool completely.

Makes ~ 18 cupcakes. (Mine made 24 cupcakes.)

Salted Caramel Buttercream

1/4 cup granulated sugar
2 tablespoons water
1/4 cup heavy cream
1 teaspoon vanilla extract
1 stick salted butter
1 stick unsalted butter
1/2 teaspoon sea salt
2 cups powdered sugar

In a saucepan, stir together granulated sugar and water.  Bring to a boil over medium high heat.  Cook without stirring until mixture turns a deep amber color.  Remove from heat and slowly add in cream and vanilla, stirring until very smooth.  Let caramel cool for about 20 minutes, until it is just barely warm and still pourable.

In a mixer fitted with paddle attachment, beat butter and salt together until lightened and fluffy.  Reduce speed to low and add powdered sugar.  Mix until thoroughly combined.

Scrape down the side of the bowl and add the caramel.  Beat on medium high speed until light and airy, and completely mixed (about 2 minutes). Mixture should be ready to use without refrigeration.  If your caramel was too hot when added, it will cause your icing to be runny.  If this happens refrigerate for 15-20 minutes.

Banana Spice Cookies

I needed a new recipe to use for my ripe bananas. I found this one on allrecipes.com. It said to use a frosting that was a buttercream frosting, but I thought it would be better with brown butter frosting. They called for walnuts, but I'm not a big fan and didn't have any anyways, so I omitted them. I also added some nutmeg as well. They aren't the real cookie texture, more like a pumpkin cookie. Quinn said they were squishy.

Banana Spice Cookies

1/2 cup butter
2 1/4 cups all-purpose flour
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/8 teaspoon ground cloves
3 ripe bananas, mashed
1 teaspoon baking powder
1/2 cup chopped walnuts

Preheat oven to 350 degrees F.

Beat butter with an electric mixer on medium to high speed for 30 seconds. Add one cup of the flour, the sugar, eggs, baking powder, vanilla, cinnamon, soda, and cloves. Beat until thoroughly combined.

Stir in the remaining flour. Beat in bananas and nuts. Drop by rounded teaspoons 2 inches apart onto a greased cookie sheet. Bake for 10 to 12 minutes or until edges are lightly browned. Can also check if they are done by touching the middle of a cookie, and if it bounces back, it's done. Cool cookies on a rack, then frost.

Brown Butter Frosting

1/4 cup Butter
2 1/2 cups Powdered Sugar
1 tsp Vanilla
3 Tbls Milk

Melt butter and cook until a gold brown. Add powdered sugar, vanilla and enough milk to make a good consistency.

Simply Delicious Strawberry Cake

Mom made this cake a few years back for Melanie's birthday. I thought it was so wonderful, so I made sure she sent me the recipe. It's a Paula Dean recipe. Since she's never posted it, I told her I would do it for her.

I have been craving it for quite sometime, so when I had the chance to make it for the Relief Society birthday dinner, I jumped at it. If I had the whole cake in my house, I would be sure to eat the whole thing and then lick the plate as well, so I was happy to share and only have a few slices to myself.


Simply Delicious Strawberry Cake

Makes 1 (9-inch) cake

1 (18.25-ounce) box white cake mix
1 (3-ounce) box strawberry flavored instant gelatin
1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
4 large eggs
1/2 cup vegetable oil
1/4 cup water

Strawberry Cream Cheese Frosting (recipe follows)

Garnish: sliced fresh strawberries

Preheat oven to 350. Lightly grease 2 round 9-inch cake pans. (For the cake to come out easier, line the bottom with parchment paper after you have greased it.)
In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks. Spread Strawberry Cream Cheese Frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

Strawberry Cream Cheese Frosting
Makes about 4 cups

1/4 cup butter, softened
1 (8-ounce) package cream cheese, softened
1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
1/2 teaspoon strawberry extract
7 cups confectioners' sugar

In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup strawberry puree, reserving remaining for another use. Beat in extract. Gradually add confectioners' sugar, beating until smooth.
Note: For pinker frosting, add 2 to 3 drops of red food coloring to frosting.

Very Chocolate Cookies

I came across this recipe the other day as I was looking at recipes on my AllRecipes Dinner Spinner app. Apparently I was having a sugar craving as all I was looking at was desserts! :) Tonight I was making some dough up to make Valentine sugar cookies which had to chill in the fridge for an hour. I guess I had a bee in my bonnet and decided to make these as I was waiting. I think they are rather delicious, but Malcolm my non-chocolate lover, thought they were too chocolaty. I've never heard of anything having too much chocolate! So chocoholics, enjoy!
Very Chocolate Cookies

Ingredients
1 1/4 cups butter, softened
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi-sweet chocolate chips


Directions

Preheat oven to 350 degrees.
In a large bowl, cream together the butter and sugar. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa, baking soda and salt, gradually stir into the creamed mixture. Fold in chocolate chips. Drop by rounded spoonfuls onto unprepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Do not overbake. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

*My first batch came out with VERY flat cookies. I ended up adding maybe another 1/2 cup of flour and then they were beautiful and round after that. I think maybe it has something to do with where I live, as I ended up having to add a little bit more flour to my sugar cookies as well, as they were coming out the same as usual. So if they come out flat, add a little bit of flour! Mine cooked for exactly 10 mins. It's hard to tell when chocolate cookies are done.

Chocolate Lava Cakes

This is one of my favorite desserts and it's SO easy! These little cakes are a little bit of heaven with vanilla ice cream. I made these for Marion and Shaila while they were here and Shaila suggested I put it on our blog.




Chocolate Lava Cakes

1 stick of butter
4 Squares Semi-Sweet Chocolate
1 C. Powdered Sugar
2 Eggs
2 Egg Yolks
6 T. Flour

Preheat oven to 425. Melt butter and chocolate in microwave for 1 minute. Remove from microwave and whisk together until the chocolate is melted and smooth. Add powdered sugar, eggs, egg yolks, and flour. Butter 4 custard cups and divide batter evenly into cups. Bake for 13-15 minutes or until cake-like on top. Remove from oven and immediately invert onto plates. Serve warm with vanilla ice cream.

Chocolate Eclair Cake

I was really craving those red velvet cupcakes that Melanie posted. I was all ready to make them today and realized, I didn't have any cocoa, and forgot it at the store!! I was in the chocolate mood, which is hard when you don't have cocoa. So this is as close to chocolate that I'm getting today. My sister in law Laura posted this quite a while ago and I've loved it ever since. Now go and make it and don't share it with anyone else. You won't be sorry!!Chocolate Eclair Cake

Crust:
1 cup water
1/2 cup butter
1 cup flour
4 eggs

Bring the water and butter to a boil. Remove from heat and add flour. Beat in the eggs with a spoon one at a time. Bake in a 9x13 greased pan at 400 degrees for 30 minutes. Cool.

Filling:
1 (6 oz) package vanilla instant pudding
2 1/2 cups milk
8 oz. cream cheese (softened)
Mix the milk and pudding, fold in the cream cheese and pour over crust. Put in refrigerator until set.

8 oz. Cool whip

Top with cool whip.

Chocolate:

3 Tablespoons milk
1/2 cups chocolate chips
2 tablespoons butter
1 cup powdered sugar

Melt together milk, choc. chips, butter. Add powdered sugar. Cool, then drizzle over cool whip. Refrigerate.

Red Velvet Cupcakes

I know I've said this before about a recipe on a recipe blog because I haven't actually made these cupcakes but that doesn't mean I don't want to share it. I've only eaten them and they are sooooo gooooooood!! At Heidi's (my sister in law) brother's wedding reception her mom served these delish cupcakes and I thought I'd share just in time for Valentine's Day. Cute red cupcakes for the holiday, what a good idea. Thanks for sending the recipe on Heidi! (Sorry this is so spaced out, it's how it copy/pasted since I'm too lazy to retype it all. Red Velvet Cupcakes

2 1/2 cups flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup (2 sticks) butter, softened

2 cups sugar

4 eggs

1 cup sour cream

1/2 cup milk

1 bottle (1 ounce) McCormick® Red Food Color

2 teaspoons McCormick® Pure Vanilla Extract

Vanilla Cream Cheese Frosting (recipe follows)

DIRECTIONS

1. Preheat oven to 350°F. Mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.

2. Beat butter and sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy. Beat in eggs, one at a time. Mix in sour cream, milk, food color and vanilla. Gradually beat in flour mixture on low speed until just blended. Do not overbeat. Spoon batter into 30 paper-lined muffin cups, filling each cup two-thirds full.

3. Bake 20 to 25 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely. Frost with Vanilla Cream Cheese Frosting.

Vanilla Cream Cheese Frosting: Beat 1 package (8 ounces) cream cheese, softened, 1/4 cup (1/2 stick) butter, softened, 2 tablespoons sour cream and 2 teaspoons McCormick® Pure Vanilla Extract in large bowl until light and fluffy. Gradually beat in 1 box (16 ounces) confectioners' sugar until smooth.

Pioneer Woman Chocolate Sheet Cake

This is a close version to the Texas Sheet cake in the cookbook, only it uses buttermilk. It is SO SO good!! And one of those recipes that is even better the next day. It's from this website.

Pioneer Woman Chocolate Sheet Cake

Combine in a mixing bowl:
2 cups flour
2 cups sugar
1/4 teaspoon salt

In a saucepan, melt:
2 sticks butter
Add 4 heaping tablespoons cocoa. Stir together.
Add 1 cup boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.

In measuring cup, pour 1/2 cup buttermilk.
Add:
2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla

Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.

While cake is baking, make icing:
Chop 1/2 cup pecans finely.
Melt 1 3/4 sticks butter in a saucepan.
Add 4 heaping tablespoons cocoa, stir to combine, then turn off heat.
Add:
6 tablespoons milk
1 teaspoon vanilla
1 lb minus 1/2 cup powdered sugar

Stir together.
Add pecans, stir together, and pour over warm cake.
